I've heard of that tradition, although I don't know if carving was common with the Irish descendants in Newfoundland but eating turnip certainly is. It's a component of Jiggs Dinner (https://en.wikipedia.org/wiki/Jiggs_dinner), which is considered traditional for eating on Sunday's in Newfoundland. I like turnips butI don't think I'd ever try carving it though.
